You can hide user emails in your community by going to Settings > General Settings and toggling ON the Hide User emails setting. User emails will be hidden in the user directory and on their profiles.

As an admin, you can still view user emails by going to Settings > All Users and expanding a user profile or downloading your Membership CSV.
